What is Aloe Vera Gel?

The aloe vera leaf is a long green leaf and when the green part is cut, the leaf has gel inside it and it appears in the form of a white gel which is highly beneficial with plenty of benefits both internally and externally.

Today, in this article I would like to share how to remove that white gel and how it can be made creamy without any chunks and lumps in gel.

How to make the gel at home?

Take a single or two long aloe vera leaves which are fresh and cut straight from the plant.

Take the leaves, using a knife remove the edges and the front and back sections of the green part…The white gel appears when green part is removed…

This white gel should be blended well and it gives a creamy chunk free gel that can be applied and used for daily purposes such as face or hair.

There is a yellow liquid that always appears on the leaf and the leaf should be washed well or cut off that area/section from where the yellow liquid appears.

How to grow aloe vera at home?

It is a very simple and best method to grow aloe vera at home without buying it from the stores as it could cost expensive to buy a single leaf and it is easy method to grow aloe at home.

When growing it in a pot or loose soil, always use a small aloe vera plant with roots and sow it. Water it regularly and it grows into thick and dense aloe vera plant with big leaves and thick leaves in few months.

Buying aloe vera from the stores?

It is a great idea to get the leaf and gel from the stores if they are easily available but make sure to buy organic and pure gel forms without any chemicals added into it.

The gels available are not in pure forms and bring adverse reactions to the skin if not suitable.

Therefore, in this article I have tried to extract it at home by using a knife and a blender.

The gel is very useful to our face, skin and hair and it has many useful properties which I will be listing below which could be useful while using the gel.

Uses and benefits of aloe vera gel:

  • The gel if applied regularly on face moisturizes the skin and acts as a natural moisturizer.
  • It can also be used to make facial for face using the pure aloe vera gel.
  • Aloe vera gel acts as a toner to our face as well.
  • If applied often on skin or face, it gives a fresh glow to the face.
  • It is a useful gel for beautifying and enhancing the beauty of a person.
  • The gel is not only useful for face but good for hair as well.
  • If the gel is mixed with various oils such as coconut oil or olive oil and applied on scalp and rinsed after an hour helps in growing thick hair.
  • It mainly helps in growing hair and also repairs hair loss and gives shiny and lustrous hair.

What is Rose Water?

This is a natural extracted water from the petals of roses from the rose plant.Here, I have made the water in a natural way which can easily be stored for at least 20 days whereas the rose water made in industries can be used until the date of expiry is mentioned on the product.

Since the water is made homemade using it for shorter period is suggested and can be made fresh once the water is about to finish.

Rose is a beautiful flower and everyone loves roses. They are used for many purposes such as celebrations and on various occasions as well.

In this article I would like to highlight the main use of roses in our day to day life and it is mainly used to enhance our beauty as well as used in cooking.

There are few recipes which are traditionally made and in such recipes rose water is an essential ingredient to give out fragrance and aroma.

Time taken to make homemade rose water at home?

Since this is my personal experience on making this spray, it took me more than an hour which is approximately close to 2 hours to make it.

It is necessary to make use of many flowers and only the petals of the flower should be used while making and therefore it is better to use at least 20 to 25 flowers with only petals.

The petals are placed in a big bowl and allowed to be heated on a very low flame which release steam and that steam is collected inside a small bowl placed inside the big bowl. The resulting steam if collected for few hours condenses and becomes the natural rose water from the petals.

It is definitely a time consuming process but it is definitely a DIY activity that can be tried at home. It can be used at times where the rose water that is bought from stores is not available.

The rose water spray bought from stores to enhance the beauty should be organic without any chemicals mixed. This kind of organic products are safe compared to the one’s which are chemical based.

There are plenty of uses of rose water which I would be highlighting according to my personal experience:

Uses of rose water:

  • It is used mainly to enhance the beauty of the skin.
  • It is mainly used for external purposes but if we consider usage of rose water decades ago then it has been used as an edible ingredient mainly for cooking.
  • If beauty is considered, then it is used to spray all over the face which gives instant freshness and glow to the skin.
  • It also acts as a great toner.
  • If it is applied on dark circles, it is said to reduce the puffiness around the eyes as well the lightens the area around our eyes.
  • It is a natural glow spray for face if used regularly.
  • It also lightens the dark spots if applied on the affected area with cotton.
  • Other than the beauty purpose it is used for the purpose of cooking which is usually added to give pleasant aroma or flavor.

Instant way of making rose water:

To make quick rose water follow the following procedure:

  • Take a pan, add the rose petals, add water and close the lid.
  • Allow the petals to steep well into the water and the color of the water should change.
  • The water should be strained well and this strained water can be cooled and stored in a bottle for at least 10 days and used on skin.
  • This is the quickest method to make rose water at home but cannot be used for a long time whereas the long procedure is effective and can be used for long duration.

Ingredients

  • 20 rose flowers (only petals of them)
  • 1 cup water
  • 6 ice cubes
  • 1 wok or pan
  • a small bowl
  • a lid

Instructions

  • Separate the petals from the rose flowers.
  • Take a wide pan or a wok and place the rose petals all over the pan and only leave the centre part of the pan empty.
  • Place a small bowl at the empty centre part.
  • Add a cup of water all over the rose petals.
  • Cover the pan with a lid or a plate.
  • Place some ice cubes on the plate.
  • Switch on the stove.
  • Cook on very low heat.
  • The rose petals start heating and release vapors and touch the plate.
  • Once condensed the vapors condense and get collected into a bowl.
  • This process should be continued for at least 1.5 to 2 hours if more flowers and water is used.
  • Once all the rose fragrance water is collected into a bowl, switch off the gas.
  • Take out the small bowl which consists of condensed rose water.
  • Allow the water to cool down.
  • Pour the water into a spray bottle.
  • Store and use for 15 to 20 days for face or skin.

Chicken shami kabab recipe, a simple and instant kabab or cutlet style of making chicken as a starter recipe.

This particular method of making is similar to shami kabab with mutton but here in this post these are exclusively made using chicken in a similar style but with a slight difference.

I have already shared many chicken starters such as chicken malai tikka, chicken seekh kabab, chicken cutlet, chicken 65 which can be eaten as a snack or as a starter recipe, tandoori chicken in oven, chicken samosa, chicken spring rolls , chicken tikka , chicken pakora tc.

Procedure to make chicken shami kebab:

  • The chicken that is used has to be boneless.
  • Do not use chicken with bones to make chicken shami.
  • The chicken has to be pressure cooked with dry spices, garam masala and herbs.
  • The chicken needs to be cooked with a spoonful of chana dal/ bengal gram to make help in binding.
  • Once the chicken is cooked well, it is then allowed to cool down and then blending into a paste of the cooked chicken.
  • The chicken paste is then mixed with egg white in order to help the process of binding well.
  • The paste is then taken in small portions and made as small round tikki shape to shallow fry them in oil.
  • The tikki should be shallow fried well in oil for some time on both sides.
  • The shami chicken is ready once shallow fried.

Two ways to make the chicken shami kebabs:

  • One way is to directly mix the egg with the chicken paste and making tikkis and shallow fry the kebabs or cutlets in oil.
  • Other way is to first making the round tikki then coating the round tikki with the beaten egg mixture and then placing the coated tikki in oil and shallow frying.
  • Both these ways help in better outcome and help in binding properly and do not let the chicken kebab break open in oil.

These kababs are highly popular is some countries but compared to chicken the taste of the mutton shami kabab is more flavorful.

These chicken tikkis can be used as a simple snack or can be placed as a chicken tikki between the buns of a burger.

The cooking time for chicken is slightly lesser than mutton as chicken takes less time to cook.

Ingredients required to make chicken shami kabab:

Chicken: It is the first and most important ingredient to make the kabab and it has to be boneless to make perfect tikkis.

Chana dal/ bengal gram: The dal is used to give taste to the cutlets as well as help in giving proper shape to the kababs without breaking.

Dry spices: Common spices such as salt, red chili powder, turmeric powder, garam masala powder, black pepper powder, ginger garlic paste are used while cooking the chicken.

Herbs: Coriander leaves and mint leaves are used to add for unique flavors and they give out pleasant aroma as well as adding of green chilies is also essential to make the kababs more interesting.

Egg: After making the paste, beaten egg or only egg white can be added to let the shami not break while shallow frying.

If egg is not added then due to the dryness in the paste of boneless chicken, the kababs tend to open up completely while shallow frying them. Therefore, add a little bit of egg mix or white part of the egg to help the kebab bind well without breakage.

Oil: It is required to shallow fry the chicken shami kabab.

It can be used in rolls or can be served with any dip or sauce and eaten plain.

This recipe is a good choice to make as an iftar recipe during the month of Ramadan but care should be taken while making the chicken shami kababs as it is difficult to make because the paste made is too dry and they can break open completely while frying if not blended well with egg while making the shami paste.

A chicken tikki shallow fried in oil using boneless chicken.

Ingredients

To tenderize the chicken:

  • 500 gms boneless chicken
  • 2 tbsp chana dal/ bengal gram
  • salt to taste
  • 3/4 tsp red chili powder
  • 1/4 tsp turmeric powder/haldi
  • 3/4 tsp ginger garlic paste
  • 1/2 tsp garam masala powder
  • 1/4 tsp black pepper powder (kali mirch powder)
  • 3 medium size green chilies
  • 1 tbsp coriander leaves
  • 3 mint leaves
  • 1 tsp oil
  • 1/4 cup water

Other ingredients:

  • 2 tbsp egg white
  • oil to shallow fry

Instructions

To cook the chicken:

  • In a pressure cooker, add boneless chicken pieces.
  • Add the chana dal or bengal gram into the chicken.
  • Add dry spices such as salt, red chili powder, turmeric powder, ginger garlic paste.
  • Add garam masala powder and kali mirch powder to the chicken.
  • Add coriander leaves and mint leaves to it.
  • Add green chilies to the chicken as well.
  • Add a teaspoon of oil into the chicken.
  • Mix all the ingredients well.
  • Add very little water, mix and pressure cook for 5-6 whistles.
  • Switch off the flame.
  • Reduce the steam.
  • Remove the lid.
  • If there is water remaining, cook until all the water gets absorbed.
  • If no water remains then allow the chicken to cool down.

Blending the chicken:

  • Grind the chicken and make a paste of the chicken.
  • Transfer the paste into a bowl.
  • Add two teaspoon to three of egg white or beaten egg (with yellow and white) to the paste and mix well.
  • Allow the chicken paste to rest in refrigerator for at least an hour before frying as it helps to bind the tikkis well.
  • Apply oil to the palms.
  • Take a small portion of the chicken paste.
  • Make biscuit shape like round tikkis.
  • Make tikkis similarly of rest of the paste.
  • Heat a pan by adding oil for shallow frying.
  • Drop the round kababs carefully into the oil.
  • Flip only after one side is shallow fried well.
  • Shallow fry each side until they are nicely done on low to medium flame.
  • Take them out and place them on an absorbent paper.
  • Serve hot with sauce or chutney dip.

Notes

  • Adding egg white or mix of yellow and white part of egg is extremely important as the chicken paste is dry and adding egg to the paste and mixing helps in binding the paste well and results in better outcome without breaking the kababs.

How to make toast:

Toast is usually made with bread and a toaster is used by placing the bread inside a toaster and toasting it directly.

There are however many other ways of making the toast such as using a grill or an oven or a microwave or on a tawa.

I have used simple style of making the toast on a tawa and has turned out delicious which is a good breakfast option for kids as well as young one’s.

How to make simple bread toast with egg:

Here we need to use bread slices and the bread that is used can be white or brown.

White bread is often made using all purpose flour and has good taste and flavor whereas brown bread is basically a sandwich bread that is often used to make sandwiches or other healthy bread recipes such as bread upma.

One can make use of any bread to make this recipe. The bread is then cooked by coating it in egg mixture.

Similar recipe made without egg is bread pizza already posted on the blog which is another snack variety for kids.

Ingredients needed to make egg mixture:

The eggs are beaten and added into it are spices and herbs such as dry spices which are basically available in Indian kitchens and herbs such as coriander leaves, green chilies, pepper powder, onions and tomatoes too are used to make it like a masala toast.

The egg mixture is prepared with all the above ingredients and then the bread is toasted on a tawa by dipping the bread into the egg mixture and then adding the egg mixture as a topping to the bread and cooking each side for few minutes.

Should toast be made only in toaster ?

It is not necessary to toast it only in a toaster. It can made in a grill or a tawa/griddle which turns out even more delicious. I prefer making toast recipes on a tawa.

It is mainly made using bread and egg. There are however several other toast recipes made without egg and I would be more than glad to share each kind of a toast which is eggless as well.

It is basically easy and simple to make it in a pan and does not need an expert help. It can be made even by bachelors or someone who are at their initial stage of learning process.

How to make this toast simpler?

To make it less spicy it is better to go for basic spices such as salt and pepper and then skip the rest of the ingredients. Make the egg omelette mixture with just these two spices and if required add little milk into it.

Dip the bread slices into it and then cook each side of the bread slice for few seconds.

The most important thing is to apply some oil or butter on the gridle before making the toast.

If butter is added, it would taste even more better but is not a healthy option.

  • Add chopped tomatoes, chopped coriander leaves, black pepper powder.
  • Mix all the ingredients well.
  • Heat the tawa or griddle or a pan.
  • Add oil/butter and heat it.
  • Take each bread slice and dip it into the egg mixture.
  • Make sure the bread slice is coated well with the mixture.
  • Place the coated bread slice into the pan or tawa.
  • Add some egg mixture as a topping on the bread slice
  • Cook the bottom side for few minutes on low flame.
  • Flip it.
  • Cook the other side for few minutes on low flame.
  • Make sure both sides are cooked well.
  • Take them out and serve hot with ketchup.
  • Repeat the same procedure for the other bread slice.
  • Serve hot.

Notes

To make 3 to 4 bread toast, 3 or 4 eggs should be used and the quantity of the ingredients should be doubled to make 4 toasts.

Mutton chops, a recipe which is stir fried well after tenderizing the chops by pressure cooking and this is one of the best ways of making chops that can be used as a starter or can be used with any main course meal as a side dish.

There are various ways to make chops and here I have made it as mutton chops fry and not in the form of a curry which tastes better as fried form.

I have shared various mutton dishes ranging from starters to main course such as mutton biryani, keema recipe, mutton gravy, mutton kabab, mutton curry , mutton liver, mutton korma and mutton kulambu.

In India and International cooking these chops are used in various ways. There are lamb shoulder shops or lamb loin chops which are easily available in stores if requested or can be availed easily in International stores.

Different ways of frying chops:

  • The chops have to be tenderized slightly and not overcook them before stir frying them as deep frying them raw does not give a good taste.
  • The chops then can be stir fried by marinating in many ways.
  • They can be marinated with simple spices available and then stir fried.
  • They can be given heavy coating of maida and corn flour to give different results.
  • Each way tastes amazing if properly cooked.

How to make mutton chops here:

I have pressure cooked the chops first by adding onion, ginger garlic paste, salt, oil and little water. They should not be over cooked as overcooked chops do not taste well. The chops should then be marinated in some spices for few minutes followed by stir frying them in oil.

Spices used for marination:

Yogurt: This is the main ingredient for any recipe that is given the flavor of kababs.

Dry spices: The spices used here are salt, red chili powder, coriander powder, cumin powder, ginger garlic paste, black pepper powder, garam masala powder etc…

Kasoori methi: This gives a pleasant aroma to the marinade. This is easily available in dried form in stores.

How to make chops in oven:

If baking them in oven then follow the procedure mentioned below:

  • The best way to bake is by marinating the chops with salt, pepper powder and other basic herbs such as salt and chili powder or it can be skipped for less spicy flavor.
  • They are then mixed with little yogurt.
  • Marinated for at least 2 hours in refrigerator.
  • They are then placed on a baking rack on a baking tray.
  • The temperature set for them to cook perfectly is at 400 degrees F for at least 2 hours.
  • These baked chops can be eaten directly or can be sauteed slightly in olive oil for more flavorful taste.

I have not used egg to give any sort of coating to the chops. Just keeping it plain, simple and traditional gives amazing flavor to the chops.

I have tried chops in the oven as well as on cook top such as in this recipe and both methods turned out awesome.

I would suggest to use lamb chops to make mutton chops fry or any chops recipes as they can be soften quickly and taste best and do not take long time to cook.

Ingredients

To pressure cook chops:

  • 6 mutton chops
  • 1/2 onion, finely sliced (medium size onion)
  • salt to taste
  • 1 tsp ginger garlic paste
  • 1 tbsp oil
  • 1/4 cup water

To marinate the chops:

  • 2 tsp thick yogurt/curd
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder/haldi
  • salt to taste
  • 1 tsp ginger garlic paste
  • 1/2 tsp roasted coriander seeds powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1/4 tsp black pepper powder
  • 2 tsp corn flour
  • 1/4 tsp kasoori methi
  • a pinch of red color

To stir fry:

  • 4 tbsp oil

Instructions

To pressure cook the chops:

  • In a pressure cooker, add the mutton chops, sliced onions.
  • Add salt as per taste, ginger garlic paste, a tablespoon of oil,
  • Add little water and pressure cook for 1 or just 2 whistles.
  • Do not overcook them.
  • Reduce the steam and remove the lid.
  • If there is water remaining, keep the lid uncovered and cook until water completely absorbs.
  • Switch off the flame.
  • Allow it to cool down before marinating.

Marinating and frying the chops:

  • Take a mixing bowl, add thick yogurt, red chili powder, turmeric powder, salt, ginger garlic paste.
  • Add coriander powder, cumin powder, garam masala powder, kali mirch powder or black pepper powder, corn flour.
  • Mix well, add a pinch of red food color and mix everything.
  • Add dried crushed kasoori methi.
  • Add the mutton chops.
  • Mix well and marinate the chops for 15-20 minutes.
  • Take a pan, add oil and heat it.
  • Add the marinated chops and stir fry them until they are fried well on all sides.
  • It takes about 10-12 minutes for them to be fried well on medium to low flame.
  • Stir frying gives delicious flavors to the mutton.
  • Take them out on a tissue paper and serve hot.
  • Enjoy as a starter or serve with a dip and salad.

Egg biryani or anda biryani made using pressure cooking method is the simplest and quickest form of making biryani with one pot method.

What is Egg biryani?

It is simply made by stir frying boiled eggs and cooking them in masala gravy specially made as a biryani gravy and then adding rice to water and pressure cooking the rice.

The rice turns out flavorful because of the masala and the eggs too give an amazing flavor and aroma to the rice.

Here, I have made using pressure cooking one pot best method to make quick biryani and I have also shared a vegetarian version of making veg biryani in cooker which is similar to this method but it has been made using just plain veggies in cooker method…

Different egg recipes indian style?

I have already shared various indian egg recipes on the blog but to find out special rice recipes made using eggs then do try egg pulao, egg fried rice which go well with raita such as onion raita , boondi raita or cucumber raita.

Eggs are a rich source of proteins and including eggs in our diet builds our muscles, it is rich in vitamins and is a good source of calcium.

Eggs if included in the form of boiled are much more healthier than eating in fried form.

How to make anda biryani recipe:

To make this easy biryani using boiled eggs, the eggs need to be boiled first, then slit them slightly stir fry them in spices. Do not fry as egg fry but just fry them slightly sauteing in little spices.

Take a cooker and add oil and fry the onions in whole spices for flavorful aroma, then the gravy is made by adding onions, tomatoes and yogurt.

Yogurt and tomatoes combined give the gravy a masala flavor which help in lifting up the biryani flavors.

The gravy is then made even more tastier by adding various spices, herbs and cooking it well. The rice is then cooked in the cooked gravy by giving a whistle with the help of a pressure cooker.

The rice used here is basmati rice but one can even make use of ordinary sona masoori rice too… If basmati rice is used then do soak the rice for few minutes which help resulting in long grains of rice.

Ratio of rice to water for pressure cooker biryani:

Always make sure the ratio of water to rice should be in such a way that water is half cup less to the usual amount of water added to rice.

For example, if we add 2 cups of rice, normally we add 4 cups of water to cook rice in traditional slow cooking method, but, to cook rice in pressure cooking style just add 3.5 cups of water to 2 cups of rice.

If adding 3 cups of rice then add either 5 cups of water or 5.5 cups of water that is little less than what is usually added in slow cooking rice method.

If water added is more then the rice turns out soggy and does not taste and appear good.

How many whistles to be given:

It completely depends on how pressure is released.

  • If pressure is released naturally, then just give 1 whistle.
  • If pressure is removed quickly then 2 whistles should be given.
  • Whistles more than 2 burns the rice at the bottom.

Step by step recipe procedure for egg biryani:

Steps to stir fry the boiled eggs:

Boil eggs and peel them.

Take a pan, add oil and heat it.

Add dry spices such as salt, red chili powder, turmeric powder.

Slit the peeled boiled eggs slightly and add them into the pan.

Stir fry the eggs carefully for 5-6 minutes.

Place them aside for later use.

Steps to make the biryani:

Take a pressure cooker, add oil, heat it and add spices such as cinnamon stick, cardamoms, cloves and shahi zeera.

Add sliced onions and stir fry them until they turn slight golden in color.

Add ginger garlic paste and saute for few minutes to get rid of raw smell.

Add the tomatoes, mix and cook them until soft.

Add the yogurt into the gravy and give a mix.

Add the spices such as salt, red chilli powder, turmeric powder into it.

Cook the gravy until oil releases from the ends.

Add 5 cups of water to the gravy.

Check for salt consistency and add as per requirement.

Add the soaked basmati rice into the water, mix well or stir.

Add the stir fried boiled eggs.

Add coriander leaves, mint leaves, slit green chilies, fried onions on the top.

Add black pepper powder and garam masala powder.

Cover the lid of the pressure cooker, give one whistle and switch of the flame.

Release the pressure naturally or let the steam escape completely in its natural way.

Remove the lid carefully once pressure escapes.

Allow the biryani lid to be uncovered for 2-3 minutes.

Biryani is ready to be served.

Serve hot with onion raita or mirchi ka salan or masala baingan or gutti vankaya curry. This can also be served with non veg recipes such as chicken starters like tandoori chicken in oven or chicken 65 or chicken pakoda.

  • salt to taste

  • a pinch of turmeric powder/haldi

  • 2 cardamoms/elaichi

  • 3/4 cup yogurt/ curd

  • 5 stir fried boiled eggs
  • 2 tbsp chopped coriander leaves

  • 1/4 tsp black pepper powder
  • 1/4 tsp garam masala powder
