A Little About Us

Estonian Food and Cuisine. This is blog created to promote and introduce Estonain Cookery. Maybe these recepies are not uniq, but these are typical. Food we are eat at home. Do You Know where Estonia is? This is the one of the smallest country in European Union. In Estonia lives only 1 235 000 people, but we have our own language, university and culture. Thanks for challenging history our food is influenced by German, Russian, Swedish… Estonian Food is real fusion. And it seems to me, that we have taken the best of everything. We eat a lot of milk products. We love sour cream (hapukoor), quark (kohupiim) and our children like for breakfast chocolate glazed curd snacks (kohuke).

In my childhood almost every street corner boasts the ubiquitous yellow kvass tanks, which dispense the thirst quencher throughout the day. At that time, we did not know anything about hygiene… This time was used glass drinking glasses ( no plastic!), and after each drinker, the glass was simply flushed with cold water..:) (those were just the times! And no one had a Covid19…)

But kvass was very delicious. And the most important. This is very easy to make it by your self.

Home Made Rye Bread Kvass. Leivakali

  • Servings: 1-litre
  • Difficulty: easy

A Kvass is a fermented beverage, which is made is made from fermented black or rye bread, spring water, and herbs.

Ingredients

  • 2 litre water
  • 400 g fermented rye bread
  • 100 g honey ( or less if you do not like very sweet)
  • 10 g yeast
  • (mint or black currant stalks or leaves)

 

Directions

  1. Bring water to the boil and pour over dried and roasted rye bread
  2. Let set under lid few hours.
  3. Strain and add honey, yeast ( and peppermint stalks)
  4. Let the mixture ferment for 5-6 hours.
  5. Strain the mixture into the towel-covered sieve and drain properly. And pour into bottles. Close the cap
  6. Keep refrigerated and drink after 2-3 days.

Kama Quark Cream. Kama kohupiimakreem

Kama is perfect summer dish. Just add quark cream and dessert is ready!

Historically kama was a non-perishable, easy-to-carry food that could be quickly fashioned into a stomach-filling snack by rolling it into butter or lard; it didn’t require baking, as it was already roasted. Today the Kama is a perfect summer dish. Just add quark cream and dessert is ready!

The Kama is not translatable and technically not a dessert, but rather an ingredient sometimes used in desserts. It’s actually a mix of different flours – usually barley, rye, oat and pea. The Kama, like many Estonian foods, emerged because a lack of ingredients made people imaginative. After using all the different grains, they would simply mix the leftovers together.

  • Servings: 4-6, 20 cm

Ingredients

  • 100 g soft butter
  • 3 egg yolks
  • 1 dl sugar
  • 3 dl flour
  • filling

  • 2 dl berries. Black or red currant, blueberries
  • 1 dl sour cream
  • starch for frozen berries
  • (sugar)

  • 3 egg whites
  • 1 dl sugar

Directions

  1. Beat soft butter and sugar together into a light foam
  2. Add egg yolks one by one, stirring constantly
  3. Add flour gradually while stirring. Pour into greased /baking paper-lined pan ( 20 cm)
  4. Mix berries with sour cream. In case you use frozen, add some starch ( and sugar)
  5. Bake at 200 C for 20 minutes.
  6. Beat egg whites and sugar. begin at a slow speed and gradually move up to high, until the beaters or whisk is lifted out of the egg whites, the peak will stand erect and not bend over.
  7. Cover cake with egg white foam, and bake at 100 C for 30 minutes.

A combination of strawberries and fish may seem strange. But sour and sweet berries complement saltness of fish very well. The onion adds a structure and a sparkle.

And rye bread. This is just a base. The heart of this salad.

  • Cleanse fish. Herring or other smoked and salty fish
  • Toast rye bread and cut into slices
  • Cut strawberries into slices
  • Chop chives
  • Chop (red) onion. If you are going to use “white” onion, I suggest to marinate it for a couple of the minutes in strawberry juice.fish (7) For salad dressing
    season sour cream with pepper and (taste your fish !!) with salt.

Of course, there have been records, very warm and very cold summers. But in average summer temperature is +23-25 C degrees.  And after few days of warm days starts whining…. too hot 🙂

The Estonian climate is very humid, which means that our warm feels very warm and our cold feels very cold.

As everywhere, Estonians eat and drink during summertime food, which does not need long preparation time and time in front of the hot stove.
There are few Estonian favourite Summer Dish

Different salads and grilled meat and fish. For example Chicken In Yoghurt Marinade

I would say that Cottage Cheese is one of the most popular Summer Dish. Estonians combining it with new potatoes, herring and vegetables. Very easy to prepare, healthy and delicious. Find from my blog recipes with Cottage Cheese.

When the vegetables start to mature, combine new fresh potatoes, cabbage and carrots and peas… to cook amazing New Vegetable Soup

When the weather is very hot, you need cooling dishes. Like cold soups. There are different recipes in my blog but try for example cold soup from Seto Cuisine.

Every Estonian has its own recipe, how to brine and salt and marinate cucumbers.  Even in my blog, you can find a few different recipes. It takes only a few hours but cucumbers taste very delicious and complement all summer dishes.

Now is something for advanced 🙂 Meat Jelly/Aspic. Sült. Making and cooking Sült take a long time and hours. But nowadays we can buy sült from the store. Open package and delicious and healthy dinner are ready. Add some new potatoes and cottage cheese and sour cream… yummy!

And one more delicious food you can not prepare by yourself. Visit Estonia and buy some packages the Kama 🙂 During summer I have the Kama as breakfast. I add natural yoghurt or kefir and a lot of fresh strawberries and a handful of seeds… Delicious!!

In July will be ready the first chanterelles. And later will be ready other mushrooms. So, it is a mushroom time!!! You can find from my blog lot of recipes with mushroom

And berries for dessert. Wild strawberries, then blueberries/bilberries, cloudberries, raspberries, black and red currants,  gooseberries, cowberries/lingonberry, cherries…
Mix with whipped cream or sour cream or bake a cake.
