A combination of strawberries and fish may seem strange. But sour and sweet berries complement saltness of fish very well. The onion adds a structure and a sparkle.

And rye bread. This is just a base. The heart of this salad.

  • Cleanse fish. Herring or other smoked and salty fish
  • Toast rye bread and cut into slices
  • Cut strawberries into slices
  • Chop chives
  • Chop (red) onion. If you are going to use “white” onion, I suggest to marinate it for a couple of the minutes in strawberry juice.fish (7) For salad dressing
    season sour cream with pepper and (taste your fish !!) with salt.

Of course, there have been records, very warm and very cold summers. But in average summer temperature is +23-25 C degrees.  And after few days of warm days starts whining…. too hot 🙂

The Estonian climate is very humid, which means that our warm feels very warm and our cold feels very cold.

As everywhere, Estonians eat and drink during summertime food, which does not need long preparation time and time in front of the hot stove.
There are few Estonian favourite Summer Dish

Different salads and grilled meat and fish. For example Chicken In Yoghurt Marinade

I would say that Cottage Cheese is one of the most popular Summer Dish. Estonians combining it with new potatoes, herring and vegetables. Very easy to prepare, healthy and delicious. Find from my blog recipes with Cottage Cheese.

When the vegetables start to mature, combine new fresh potatoes, cabbage and carrots and peas… to cook amazing New Vegetable Soup

When the weather is very hot, you need cooling dishes. Like cold soups. There are different recipes in my blog but try for example cold soup from Seto Cuisine.

Every Estonian has its own recipe, how to brine and salt and marinate cucumbers.  Even in my blog, you can find a few different recipes. It takes only a few hours but cucumbers taste very delicious and complement all summer dishes.

Now is something for advanced 🙂 Meat Jelly/Aspic. Sült. Making and cooking Sült take a long time and hours. But nowadays we can buy sült from the store. Open package and delicious and healthy dinner are ready. Add some new potatoes and cottage cheese and sour cream… yummy!

And one more delicious food you can not prepare by yourself. Visit Estonia and buy some packages the Kama 🙂 During summer I have the Kama as breakfast. I add natural yoghurt or kefir and a lot of fresh strawberries and a handful of seeds… Delicious!!

In July will be ready the first chanterelles. And later will be ready other mushrooms. So, it is a mushroom time!!! You can find from my blog lot of recipes with mushroom

And berries for dessert. Wild strawberries, then blueberries/bilberries, cloudberries, raspberries, black and red currants,  gooseberries, cowberries/lingonberry, cherries…
Mix with whipped cream or sour cream or bake a cake.

Nettles are very important and has been used in Estonian folk medicine centuries.
Folk wisdom teaches that nettle contains vitamins C and K, B vitamins, as well as minerals like calcium, magnesium and iron, to name a few
The nettle takes away fatigue, abdominal pain and water swelling, reduces and stops bleeding, reduces the appearance of diabetes mellitus

And did you know: nettles contain vitamin C 2.5 times more than the lemon (660 mg%).

But of course, you can use any weed to replace nettles. Goutweed taste like carrots and celery. Nettles are a little bit sweet. And wood sorrel is sour.
Nettles keep 1-2 minutes in the boiling water. Goutweed and wood sorrel are edible fresh.

NB! Use only young, fresh, new, small weed, growing in the pure environment.

Ingredients

  • a couple of handfuls of nettles
  • 6 boiled potato
  • 1 onion
  • 2 eggs
  • salt, pepper
  • flour
  • oil

Directions

  1. Pour fresh nettles over with boiling water, pour into a sieve and cool down using cold water

  3. drain and chop.
  4. grate potatoes, chop an onion into small cubes
  5. mix together potatoes, nettles, onion and eggs. Season
  6. form the dough into flat fritters and dip them into the flour
  7. Fry in average heat pan until the fritters are browned

A delicious, crunchy and juicy rhubarb or apple crumble cake. Soft and mellow rhubarb cake with a crunchy top. I love a combination of tart rhubarb or apples and sweet dough.

  • Servings: 4-6

Ingredients

  • 2 eggs
  • 200 g sugar
  • 1 dl milk
  • 1 dl 35% cream
  • 100 g melted butter
  • 2 teaspoon baking powder
  • 4 dl flour
  • Filling

  • 0,5 l peeled and cleaned and sliced rhubarb or apples
  • Crumble

  • 50 g cold butter
  • 100 g sugar
  • 1 dl flour

Directions

  1. beat eggs and sugar together into a light foam. Add milk, cream and melted butter.
  2. Sift flour and baking powder together and add try ingredients to the egg mixture while stirring
  3. Pour into a greased or baking paper-lined pan.
  4. Place rhubarb or apples on top.
  5. Mix together crumble cold butter, sugar and flour. Sprinkle crumble over cake
  6. Bake at 200 C for 25-30 minutes
